Ingredients (Serves 4)

  • 250g paneer (cubed)
  • 3 medium tomatoes (chopped)
  • 2 medium onions (chopped)
  • 10–12 cashew nuts
  • 1-inch ginger
  • 5–6 garlic cloves
  • 2 tbsp Chiranjiv Gold Mustard Oil
  • 2 tbsp butter
  • ½ cup fresh cream
  • 1 tsp Kashmiri red chili powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp kasuri methi (crushed)
  • 1 tsp sugar (optional)
  • Salt to taste
  • ½–1 cup water
  • Fresh coriander for garnish

Method

Step 1: Prepare the Gravy

  1. Heat 2 tbsp Chiranjiv Gold Mustard Oil until it reaches the smoking point, then lower the flame.
  2. Add onions, ginger, garlic, and cashews. Sauté until the onions turn light golden.
  3. Add chopped tomatoes and cook until they become soft.
  4. Let the mixture cool and blend into a smooth paste.

Step 2: Cook the Masala

  1. In the same pan, add 2 tbsp butter.
  2. Pour in the blended paste and cook for 5–7 minutes.
  3. Add turmeric, Kashmiri red chili powder, coriander powder, cumin powder, and salt.
  4. Cook until the butter begins to separate from the masala.

Step 3: Add Paneer

  1. Add water to achieve your preferred consistency.
  2. Stir in fresh cream.
  3. Add paneer cubes and simmer for 2–3 minutes.
  4. Sprinkle garam masala and crushed kasuri methi.
  5. Mix gently and turn off the heat.

Garnish & Serve

  • Top with a small cube of butter, a swirl of fresh cream, and chopped coriander.
  • Serve hot with butter naan, garlic naan, tandoori roti, or jeera rice.
